This is not technically a Mexican food, but a side dish. Tortillas, also known as flatbread tortillas, are flattened and rounded-out pieces of dough consisting of either wheat, such as flour, or corn. These are commonly used to wrap around other Mexican ingredients to form the basis for other dishes. There are variants, such as those made from potato, but the most widely-regarded as authentic are the ones forged from maize.
Fajitas are considered a Mexican dish complimentary to tortillas. They are quite simple: grilled meats placed and consumed inside of flatbreads. Common additions are sauteed peppers and onion, cooked until soft, and Spanish rice. The meat types include all cuts of beef, chicken, shrimp, pork, and several others. Condiments for fajitas can include lettuce, sour cream, salsa, pica de gallo, cheese, tomatoes, and guacamole. These are optional.
With enchiladas, corn or flour tortillas wrap around meats, cheeses, seafood, beans, potatoes, other vegetables and starches, or any available combination of those. What sets these apart from other tacos and the like is the distinctive chile sauce that is poured all over the top of the tortilla once it is wrapped around the filling. There are some red variants that use tomatoes to cover and fill the enchilada with, but these are less popular than the chile kind.
Tamales are a Mexican traditional food made of masa, a starchy corn dough, and several fillings inside. The fillings include meats, vegetables, chilies, and certain types of cheeses. Many of them are wrapped in corn husk or leaf paper, which becomes either boiled or steamed. The wrapping is removed during consumption. These are a staple in Latin America too.
This is an extremely popular Mexican food which refers to anything wrapped in wheat flour tortillas. The tortilla itself is either steamed or grilled before being offered to the customer. Very common fillings include refried beans, or beans in general, salsa, lettuce, cheeses, sour cream, Spanish rice, salsas, avocado, pico de gallo, and anything in between.
These fillings depend on the location and where they are being prepared, but most places will allow you to customize your order to include any type you desire. Some are separated by classifications, such as bean burrito, or bean and rice burrito. Mostly though, it is a general blanket term for anything wrapped in a lightly-cooked tortilla.
